Max Olivari
Born and raised in Northern Italy, Max completed his studies at the famous culinary school “Caterina De Medici” in Gardone Riviera on the shore of Lake Garda. After graduation, he traveled all throughout his native land, working summer and winter seasons to absorb the basic and the classic styles and tastes of Italian cuisine. He then left Italy to gain a wealth of different culinary experiences where his travels took him throughout Europe, Bermuda and the USA. In the big Apple, Max worked at San Domenico restaurant which during his tenure there, received the prestigious New York Times three stars award. He then presided over the kitchen of San Pietro restaurant, well renowned for authentic Italian dishes- simple, fresh and flavorful. After New York, Max spent 13 years in Bermuda at the exclusive Café Lido restaurant at the Mandarin Hotel in Elbow beach. Dedication, hard work and passion led Max to become Executive Chef, where he was not only in charge of three restaurants, but involved with catering/ banquets, and managing a team of 26 chefs.
The desire to have his own restaurant brought Max to the Turks & Caicos Islands where, in October 2010, he and his business partner Marco, opened the successful Caicos Café Restaurant & Bar in the heart of Grace Bay.
Marco Zanuccoli
Born and raised in the heart of the Emilia-Romagna hills, home of the famous Parmigiano-Reggiano cheese, Marco, took his first steps into the restaurant business at a young age. During the summer seasons he worked as a waiter in the cities of Cesenatico and Rimini on the Adriatic “ The Riviera” coast just south of Venice. The desire to travel and gain more experience eventually led Marco to Liverpool and then to Japan where he worked on the famous cruise ship "Crystal Harmony". In 1990 Marco moved to the magical island of Bermuda which turned out to be his home for 20 years. After working at various restaurants throughout Bermuda, Marco was called upon to manage the most famous Italian restaurant there called "The Little Venice”. After a successful 6 years there, Marco once again had the opportunity presented to him to open and manage yet another well-known restaurant called "Il Rustico" in the picturesque village of Flatts. After 10 years , Marco decided to leave Bermuda and open Caicos Café Restaurant & Bar in Providenciales with his longtime friend and business partner Max.
